Indian Bittermelon: Miraculously delicious

Indian Bittermelons are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana.
Indian Bittermelon contains a unique phyto-constituent that has been confirmed to have a hypoglycemic effect called charantin. There is also another insulin-like compound known as polypeptide P which have been suggested as insulin replacement in some diabetic patients.
Ingredients
500 gm bittergourd
500 gm raw mango
Cumin powder
Fennel powder
Coriander powder
Salt
Chilli powder
Vegetable oil
Preparation
Peel the bittergourd,
Don't throw peeled skin - keep it aside putting salt in it.
Put salt in bittergourd also and keep it aside for 10 minutes.
Grate the raw mango, fry it with all the masala powder and the upper peel of bittergourd.
Take it out. Fill the filling inside the bittergourd and fry it in oil on untill it's cooked.
